Spring Salad with Watermelon Radishes

This beautiful vegtable is a watermelon radish.

Eaten raw it has a spicy flavor. But if its roasted with just a litte EVOO and sea salt, it really calms down the spiciness and gives it a juicy warm flavor. Plus it looks beautiful on a salad.

Radishes are rich in calcium, potassium, folate and vitamin C.

2 oz of arugula
2 oz of spinach
1 cup of julienned carrots
1 cup of red cabbage
1 whole avocado diced
1 whole red pepper
1 whole watermelon radish- sliced roasted and diced
1/4 cup of walnuts

Topped with a homemade tahini based dressing

1 1/2 tablespoons of tahini
2 teaspoons of tamari soy sauce (or liquid amino acids)
2 teaspoons of white miso
2 tablespoons of water
a splash of fresh lemon juice, sea salt and pepper to taste

* please use organic ingredients as much as possible.

Sweet Potato and Turkey Chili

This sweet potato turkey chili is an oldie but a goodie. My family much prefers this recipe to traditional chili because of its sweet but spicy flavor.


I love it because of all the healing ingredients.

1 pound of ground turkey (I love Butcher Box) 
2 medium sized sweet potatoes, peeled and chopped into cubes
4 cloves of minced garlic
1 tablespoon of chili powder
1 tablespoon of cinnamon 
1 tablespoon of cumin
2 tablespoons of sweet paprika
1 tablespoon of sea salt
1 quart of chicken bone broth
1 15oz can of garbanzo beans ( I love the brand Eden) 
1 15 oz can of black beans
1 15oz can of kidney beans

Avocado, a little fresh cilantro and your all set for dinner.

Pumpkin Spice Chocolate Chip Cookies

These delicious cookies were such a big hit in our house and they were so easy to make. I found the recipe on sixvegansisters.com and decided to swap the vegan margarine for grass fed butter.

I love to sneak veggies into sweet treats…espicially this time of year when there are so many sweets available.

Organic flour, cornstarch, baking soda and salt
Pumpkin spice
Pumpkin puree
Organic brown sugar & sugar
Grass-fed butter
Vanilla extract
Dark chocolate chips
Non-dairy milk ( I used almond milk)
